Cinnamon Pecan Muffins

Hi guys! Happy May! It is one of my favorite months because the weather is so nice. I thought I'd share my favorite muffin recipe because I love muffins. They're not just for breakfast! I love them any time of day for a snack. These muffins make your whole house just smell like a bakery and anytime I make them, it just boosts my mood so much! This recipe was born from me having a bag of pecans and not knowing what to do with it aside from making a pecan pie. I took my basic muffin recipe and added some cinnamon and pecans and voila, the cinnamon pecan muffin was made!

Cinnamon Pecan Muffins

Ingredients:

  • 2 cups flour

  • 3 tsp baking powder

  • 1/2 tsp salt

  • 1/4 cup stevia

  • 1/4 cup sugar

  • 1/3 cup unsweetened applesauce

  • 1 egg

  • 3/4 cup almond milk

  • 3/4 cup chopped pecans

  • a few whole pecans for garnish

Directions:

  1. Preheat Oven to 400 degrees Fahrenheit.

  2. In a medium bowl, combine flour, salt, and baking powder.

  3. In a large bowl, combine sugar, stevia, egg, applesauce, and almond milk.

  4. Slowly add dry ingredients to wet ingredients and stir until just combined.

  5. Toss chopped pecans in some flour to keep them from sinking when baked. Fold pecans into batter.

  6. Scoop batter into greased muffin tin. Makes 12 muffins.

  7. Bake for 20-23 minutes, until golden brown.

  8. Halfway through baking (10 minutes), top muffins with a whole pecan and continue baking for rest of the time.

  9. Let cool on cooling rack.
